Tasters a key cog in coffee pleasure

BURLINGTON — Taste, swish, spit.

Not a very appetizing thought perhaps, but taste testing is a critical component in how your morning cup of coffee gets from the coffee plantation to the breakfast table or your local convenience store.

And a small Burlington business is the gatekeeper for a number of clients, including Dunkin' Donuts, to ensure the coffee meets the highest quality standards.

Tucked away in a small building on College Street, Coffee Analysts does the sample testing for all Dunkin' Donuts' coffee in the United States and abroad, which is a whole lot of beans — 30 cups of coffee a second, 2.8 million cups a day or 1 billion cups a year are sold by Dunkin' Donuts worldwide.

To ensure their coffee meets the highest quality standards, Massachusetts-based Dunkin' Donuts hired Coffee Analysts to test a sample of every shipment of coffee before it reaches the consumer.

The 13-year-old Burlington company has approximately 160 clients, ranging from individual roasters to large coffee companies like Dunkin' Donuts.

Facts about Coffee Consumption

Eighty percent of American adults drink coffee, according to a recent random telephone survey of 2,953 people. (The survey has a margin of error of plus or minus 1.2 percentage points.) Fifty-three percent drink it every day; 64 percent drink it at least once a week.

Coffee is most popular among the oldest Americans. Twenty-six percent of 18-24-year-olds drink coffee every day, compared to 33 percent of 25-29-year-olds, 55 percent of 30-59-year-olds and 70 percent of those 60 or older.

Sixty percent of American adults drink them, with 15 percent of all adults drinking them daily.

Cool coffee keeps sales warm

Chilled drinks boost summer business at shops

From College Hill to Bellevue and from Boston to San Diego, coffee shop owners are noticing less of a drop-off in summer sales, mainly because of the popularity of cold coffee drinks.

In Olde West Chester, Tina and Rick Monsipapa have operated A Coffee Affair for 3½ years. Seventy-five percent of sales are still brewed coffee, the couple said, but their afternoon crowd of teens and suburban moms tend to like chilled drinks, such as frappés and mochas. "When we first opened, we would be slow in the summer. The thing is, you can do anything cold with coffee that you can do hot," Tina said.

Coffee Falls on Slow Demand, Supply Gain: World's Biggest Mover

July 15 (Bloomberg) -- Coffee prices in Sao Paulo fell 3.4 percent, the biggest fluctuation of any commodity today, on signs of rising inventories during the slowest demand season.

U.S. supplies of raw coffee beans are up 14 percent this year, more than double the gain a year earlier, according to the Green Coffee Association in New York. Brazil, the world's biggest coffee producer, is harvesting its new crop, helping to swell volumes for U.S. roasters during the summer, the low point for retail coffee sales.
