We love our coffee (Tacoma)

It turns out that consumers in Tacoma and that city to the north drink a lot of hot, caffeinated beverages.

A recent survey by HealthSaver, a health care discount service, showed that we were tops in coffee consumption.

Buyers advocating for Fair Trade agricultural practices in developing countries are competing for such flavour, offering a premium for every kilogramme sold through stores managed by Flavia.

Flavia, the pioneers of single-serve, brew-by-pack beverage systems, have just announced the addition of Kenya's sustainable coffee to its selection of over 30 drinks.

Coffee Cuts Risk of Cancer by a Third

DRINKING coffee every day can reduce the risk of some skin cancers, new research shows.

Six cups a day can cut the threat by around 30 per cent.

The benefits are only seen with caffeinated coffee – decaffeinated does not have the same impact, according to scientists in America.

They found that while just over 10 per cent of women who never drank coffee got skin cancer, among those downing six cups or more a day the figure was just 6.7 per cent.

Dark roasted coffee has more caffeine than light and medium roasts. It is actually the opposite. The lighter roasts have the most caffeine. At the higher temperatures for the dark roasts many of the nuances of the coffee are burnt off, including caffeine. If you want a kick in the morning ask for the lighter roasts. If you want a major kick in the morning tell your barista you are in a hurry and call her "sweetie."

"The doctor says I need to lay off of caffeine because the acids eat at my tummy." The culprits of acid stomach are di-caffeinol and tannic acids. The culprit di-caffeinol is not roasted out until the bean goes through what is called "the second crack." If the color of the coffee is mahogany or darker, it probably has been in the roaster long enough to burn off the di-caffeinol. The color test is safer than asking your coffee purveyor if their coffee has gone through its second crack. The other culprit, tannic acid, comes from brewing cheap or stale coffee.

Background and Aims: When green coffee is stored for a prolonged time the coffee quality decreases distinctively. Apart from well-known ‘off-notes’ that arise from undesired oxidations of lipids, a typical ‘flattening’ of the cup quality is detectable. In order to elucidate the biological causes for this phenomenon, differentially processed coffees (wet, dry, semi-dry processing), were stored under standard conditions for 2 years and analysed comprehensively.

3-day Big Isle festival celebrates famed coffee

Outrigger Keauhou Beach Resort hosts three days of java-laced dining, art and international cupping competition as a participant in the 2007 Kona Coffee Cultural Festival on the Big Island, which continues through Nov. 11.

Daytime activities at the hotel include the Gevalia Kona Cupping Contest, during which the nation's top Kona coffee farmers vie for the honor of having grown the finest of coffee beans. The free event will take place 9 a.m. to 2 p.m. Wednesday, with finals from 9 a.m. to noon Thursday. At the same time both days, take in the Gevalia Coffee Art Exhibit, featuring original works that feature and/or have been inspired by Kona coffee, and the 10th annual Keauhou Resort Kona Coffee Label & Web Site Competition.
